This is my go to, super-speedy yet packed full of flavour curry. When I'm cooking it my house fills with the most amazing aromas. Its spicy, sticky and sweet and works fantastically with the normally bland tasting tofu. Serve with warmed chapatis and mango chutney, and if you are really hungry you could also add a portion of cauliflower rice.

A really tasty way to use your homemade coconut yoghurt - this would make a great, simple, breakfast or snack. Just get some clean jars and assemble. You can use any kind of yoghurt so don't feel like this only works with homemade coconut !
