A really tasty way to use your homemade coconut yoghurt - this would make a great, simple, breakfast or snack. Just get some clean jars and assemble. You can use any kind of yoghurt so don't feel like this only works with homemade coconut ! Here are 3 delicious recipes to try - they all make 2 yoghurt pots per recipe:
Fresh Berries and Granola 50g fresh berries 200ml coconut yoghurt 50g granola Put a mixture of fresh berries into each of your two jars as a base layer. then fill your jars with the yoghurt and finally the granola. Power Breakfast Pot 200ml of smoothie bowl recipe of choice 200ml coconut yoghurt 50g granola Divide the granola between the two jars. Top each with half of the yoghurt. Finally top your power bowl mix. I love to garnish with bee pollen for an extra immunity boost. Pomegranate Seeds and Honeyed Pistachios 1 pomegranate A small handful of shelled pistachios 1 tbsp. agave of syrup of choice 200ml coconut yoghurt Remove the seeds from the pomegranate. Or if you are like me and can't be bothered with the faff of deseeded the pomegranate - then buy it ready to go ! Put the seeds into each of your 2 jars as the base layer Toast the pistachios in a dry frying pan until they start to colour, which will take around 5 minutes. Remove from the heat, transfer to a bowl and add the syrup. Stir through. Fill your jars 3/4 of the way up with the yoghurt (on top of the pomegranate seeds), and top with the honeyed toasted pistachio.
