I'm not really a morning person - so I love overnight oats. Its the way I can ensure a healthy start to the day without a mad panic in the morning. I just stir all the ingredients together before I go to bed, pop it in the fridge overnight and its ready to eat in the morning ... simples!
120g oats, 1 cup
375ml almond milk, 1 1/2 cups
2 tablespoons of almond butter (or any other nut butter)
1 tbsp. maple syrup (optional - if you are following the 30 day plan leave this out)
1 tablespoon of chia seeds
Handful of raisins, about 40g
Pinch of salt
A dollop of natural yogurt (I use coconut yogurt)
Handful of chopped nuts
Another drizzle of almond butter
Place the almond milk, almond butter, oats, chia seeds, raisins, maple syrup and salt in a big bowl and give it all a good stir together. Place the bowl in the fridge and allow it to thicken overnight to enjoy in the morning!
