I'm not really a morning person - so I love overnight oats. Its the way I can ensure a healthy start to the day without a mad panic in the morning. I just stir all the ingredients together before I go to bed, pop it in the fridge overnight and its ready to eat in the morning ... simples! Ingredients:
120g oats, 1 cup 375ml almond milk, 1 1/2 cups 2 tablespoons of almond butter (or any other nut butter) 1 tbsp. maple syrup (optional - if you are following the 30 day plan leave this out) 1 tablespoon of chia seeds Handful of raisins, about 40g Pinch of salt To Serve A dollop of natural yogurt (I use coconut yogurt) Handful of chopped nuts Another drizzle of almond butter Method: Place the almond milk, almond butter, oats, chia seeds, raisins, maple syrup and salt in a big bowl and give it all a good stir together. Place the bowl in the fridge and allow it to thicken overnight to enjoy in the morning!
