Ingredients 325g / 5 cups thinly sliced red cabbage 200g / 2 cups shredded daikon radish 1 large handful of finely chopped fresh parsley 1 ripe avocado, stone removed and peeled 3 tbsp. fresh lime juice 75ml / 5 tbsp. water 1/4 tsp. ground maca 4 drops of liquid stevia Himalayan Pink Salt 40g / 1/4 cup dried unsweetened cranberries Method In a large bowl, toss together the red cabbage, radish and parsley. Set aside. In a food processor or blender, combine the avocado, lime juice and water and process until smooth. Add the maca powder, stevia and season with salt and blend to incorporate. Add the dressing to the slaw and toss to mix and coat well. Top with the cranberries and serve.
