Strawberry Smoothie Bowl

This easy Strawberry Smoothie Bowl is a simple and sweet treat.  It's a healthy paleo + vegan breakfast or snack made with only a few ingredients, and you can add whichever toppings you fancy to customise to your tastes.  
​Ingredients
SMOOTHIE BOWL
  • 160 g organic frozen strawberries
  • 1 (100 g) small ripe banana, sliced and frozen
  • 2-3 Tbsp (30-45 ml) light coconut or almond milk, plus more as needed
  • optional: 1 scoop plain or vanilla protein powder of choice*

TOPPINGS
  • 1 tbsp. (5 g) shredded unsweetened coconut (desiccated)
  • Sliced strawberries
  • 1 tbsp. Toasted almonds
  • optional: Granola, hemp seeds, chia seeds etc

Instructions
  1. Add frozen strawberries and banana to a blender and blend on low until small bits remain.
  2. Add a bit of coconut or almond milk and protein powder (optional), and blend on low again, scraping down sides as needed, until the mixture reaches a soft serve consistency (see photo).
  3. Scoop into 1-2 serving bowls and top with desired toppings (optional). I prefer chia seeds, hemp seeds, and coconut, but strawberries, granola, and a nut or seed butter would be great here, too!
  4. Best when fresh, though leftovers keep in the freezer for 1-2 weeks. Let thaw before enjoying.

Notes
*I don't love most vegan protein powders but have tried these and would recommend them! Arbonne Essentials Vanilla Protein Powder, Sun Warrior Vanilla, Vega Vanilla.

I realized that it has been a while since the last time I prepared a healthy meal for myself. Perhaps, this is a sign that it's about time to make one once again! Good thing because I have found the right recipe for me! Strawberry Smoothie Bowl looks nothing but enticing in my eyes, and I am looking forward to have a taste of it as soon as possible! Making smoothies can be complicated especially if you don't know how to follow the guidelines really well. It could be a huge mess, but it can be perfect once followed properly!
