Toasted Pecan and Oat Blueberry Crunch

My family love granola and this is one of our go-to recipes.
Ingredients
200g pecans, chopped
100g walnuts, halved
100g desiccated coconut
200g rolled oats
150g blueberries
Coconut yoghurt to serve

Method
  1. Preheat the oven to 180C/350F/gas mark 4
  2. In a large bowl , mix together the nuts, coconut, rolled oats and cinnamon.  Spread on to a baking sheet and toast in the preheated oven for roughly 10 minutes or until golden, turning halfway through cooking.
  3. Leave to cool, then toss with the blueberries and serve with the yoghurt.

* Top Tip - swap the walnuts for almonds or pistachios if you want, or combine with a delicious mixture of all three.
* Top Tip - you can use any grain you like in this; I often choose a mixture of quinoa flakes and oats.

If you are thinking of having a perfect healthy snack today, Toasted Pecan and Oat Blueberry Crunch might be the one for you. I am not really into oats and I can feel that I am becoming healthier whenever I eat oats. What's more if we are going to add some twists on it? Well, this sounds like a perfect idea! I am hoping to have it prepared as soon as possible. Perhaps, tomorrow might be the perfect time since I will be free to do it tomorrow!

Someone said I should be giving my vegetarian children oats so we can still gain the most of their nutritional requirements even if they don't eat meat. I have two different doctors for them. One would always say maybe it's time I introduce them to meat and I would always politely say no. He will be kind enough to give options then. A nutritional supplement would always most of the time give the answers we needed. Unfortunately some of them are not really plant based so this gets me into thinking which one is the lesser evil? If they also killed animals in the process of obtaining these nutrients, then I shouldn't be taking it right?
